Short, food-themed interview for the Evening Standard, 25 September 2009

The British baritone, 50, has starred at The Met, Covent Garden and La Scala and won 14 awards. He is married to the ballerina Zenaida Yanowsky.

What’s your earliest food memory?
My brother and I used to tickle brook trout out of the streams in Wales. We stuffed a bit of butter, salt and pepper in the belly and cooked them straight away.

What’s your signature dish?
A life of travelling hasn’t been conducive to cooking. However my fish pie isn’t bad.

What would be your last supper?
A Marmite sandwich on the top of an Austrian alp with my wife and one-year old son Owen. Or a table at El Buli on Spain’s Costa Brava.

What would you drink?
A glass of Tignanello – I dare say that no connoisseur would rate it: nevertheless, it would remind me of wonderful times in Milan and Ferrara.

What are your favourite restaurants around the world?
I prefer good small local places. A trattoria after work, sitting with colleagues outside the opera house. Whatever the cook has made that day and a good local wine is as much of a delight to me as any Michelin-starred hall. Context and company are everything.
